Just brush olive oil on the inner and outside of each capscicum which is scooped.bake for 10min at 120c.Toss the salads ingredients with salad dressing ( gratted carrot,cucumber,julian cut tomato-without seeds) and fill these into the scooped empty capscium.Now sprinkle peanuts and blackpeeper
